Harissa: does the recipe mean a blend or a paste?

The same name can describe different products. Before starting a harissa recipe, check that the form it calls for matches the one you have bought.

Match the recipe to the product

A spoonful of paste and a spoonful of dry blend are not equivalent. Before cooking, identify the form called for in the recipe and the one described on your packaging. Do not turn a blend into a paste without suitable instructions.

Keep the detail in your notes

Write down the preparation’s full name, form and quantity used. ‘Harissa’ alone is less helpful when you want to make the dish again. If comparing with paprika, check its stated flavour profile too: colour alone does not determine heat.
